Teardrop tomatoes and bocconcini pearls dressed in basil-balsamic-pesto…like tasting summertime in one bite!

I often get requests for party menu ideas. The criteria is almost always the same…need something that’s fresh, authentic, quick, tasty and one that meets the LeGourmandC3 food pairing satisfaction rate. Needless to say, this dish is always on my recommendation list.

I’ve seen this dish served skewered in a form of an amuse-bouche…thought that was clever. You can serve this as a salad tossed with arugula and few tranches of crusty Italian bread, or as a side dish to a grilled chicken.

Teardrop tomatoes and bocconcini pearls dressed in basil-balsamic-pesto

1 cup teardrop tomatoes

1 cup bocconcini pearls

1/3 cup basil-balsamic-pesto*

1/3 cup red onion, small dice

Sea salt & freshly ground black pepper

Toss it together in large mixing bowl; season to taste. Serve garnished with fresh basil leaves, if you like.

* Basil-balsamic-pesto: leaves from 1 bunch basil, ¼ cup parmesan, garlic, 2 tbsp balsamic (or more if you like) processed and emulsified with olive oil).
